Do you like to have a traditional meal on St. Patrick’s Day?

I enjoy keeping with the holidays, so I usually make a festive corned beef and cabbage. But since the dish is easiest to cook in large quantities, I always end up with tons of leftovers.

One year, I got the idea to use up my leftovers by making a low carb casserole. And what do you know… turns out, a corned beef casserole with cabbage is absolutely delicious!

Honestly, I might start skipping the plain beef and cabbage meal and just go straight to this recipe. Using deli corned beef would make the tasty casserole even easier!

Ingredients

I wanted to incorporate a faux colcannon into the casserole to make it nice and hearty. Colcannon is a traditional Irish dish of mashed potatoes and cabbage that is also popular on St. Patrick’s Day.

To replace the traditional starchy potatoes, I simply swapped them for cauliflower.

You’ll blend the cauliflower with a little butter, milk, and seasoning, then add it to a prepared casserole dish. Fold in the cabbage and meat, bake, and serve!

This easy keto corned beef casserole recipe will definitely be a staple for us each March. It’s so good, I’m tempted to make it year round.

Making the faux mashed potatoes

  1. If you’re starting with a fresh head of cauliflower, cut into florets. If you have frozen cauliflower, they’re likely already cut for you.
  2. Steam or boil the cauliflower until softened.
  3. Place the cooked cauliflower in your food processor. Add the butter and pulse until mashed. You can also add in a couple ounces of cream cheese to improve taste and texture.
  4. Add in your low carb milk, garlic powder, onion powder, salt, and pepper, then puree until smooth.

Completing the casserole

  1. Transfer the cauliflower mash to a large casserole dish.I like to use a 9x13-inch pan.
  2. Fold in the corned beef and cabbage.
  3. Cover with foil and bake at 325°F for about 20 minutes or until heated throughout.

That’s it! You can top with sliced green onion, cheese (irish cheddar, anyone?), or crushed pork rinds before serving.

You could even drizzle on some thousand island dressing for a yummy reuben-inspired flavor!

Tips

For this easy keto casserole dish, I like to use about a half head of cooked cabbage and one pound of cooked meat.

However, these are just approximate amounts. You can use more or less depending on what you have on hand or leftover.

I do recommend sprinkling something on top before serving. Thanks to the cabbage and cauliflower, the color can look a bit bland. The flavors are certainly NOT bland, but I know we eat with our eyes first.

That’s why I like to top mine with sliced green onions. They give it a nice pop of green.

For any leftover corned beef casserole, simply store it in an airtight container in the refrigerator. It will stay fresh for several days and is great reheated!

  • 1 head cauliflower
  • ½ cup butter
  • 1 cup low carb milk I used coconut milk in carton
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
