This past weekend, I reminded my husband of the sweet moment, on an early-90’s floral sofa, when he popped the question 26 years ago. He’s good with our anniversary, but not the anniversary of our engagement. Which is fine with me. (Below, on the sofa, 26 years ago:)

Marriage is good to write about. I think we need more strong marriages, good examples, truly-in-love stories to share with the world. Marriage is a lot of work, and it takes discipline and creativity to think outside the box, do new things, keep things fresh, be willing to try adventures, say no, say yes, be affectionate, keep dating, still hug and kiss, dance, and be willing to bend, be flexible, do something last minute.

The sun came out in central Oregon over the weekend, so Friday night Paul and I headed to the river with a bottle of wine and our snow boots, hats, and gloves (4 minutes walk from our house). Even though it was the most glorious sunset, and it felt like spring, we knew we’d be sitting in snow up to our ankles. Of course Haggis McStitch came with us. We sat on the bench, dreamed, sipped on wine, snuggled together, and it all felt like we were dating again.

These moments happen often in our marriage. We’ve both learned to take the time, to capture a moment, to sit, and be quiet. There are silent moments when we just look around. We hold hands, we’re comfortable with one another. Nothing flashy, just quiet.

Then Paul may say something profound (I listen), I take a note (in my head, which try not toforget–it’s a 50-year-old thing), and it challenges me to think deeper, or see something in a new way.

How to encourage

I think we get in ruts in our marriages when we aren’t challenged. Oh, don’t get me wrong, we may be challenged with finances, our kid’s choices, our jobs and relationships. But what about being challenged to be a better person? This is what my husband does for me. He takes me to places where I cannot be complacent, where I can grow.

A date night is not where we talk about the daily grinds of life. That can be done at home. A date night is where we encourage one another, talk about our dreams, goals, big things and small things. Encourage means to give courage, so we’re there for each other, challenging each other with courage, doing things that make us brave, when we want to shrink back.

I think we’re good for each other. I don’t want a complacent marriage!

Pineapple Ham Flatbread Pizza Recipe

Back home, walking back in the dark, and with the most ginormous full moon, we took our gloves off and held hands.

Home to a light dinner with our boys. I popped this Pineapple Ham Flatbread Pizza Recipein the oven for a few minutes.

These are delicious with leftover ham (Easter is coming!)

Serve with a side salad, and a glass of wine or beer. Nothing fancy, but good enough for a Friday night easy meal! And always delish with fresh pineapple!

Flatbread is my new go-to Friday night pizza crust. Bake it first with olive oil, then add the ingredients and bake again.

Only for a few minutes, and add more cheese if you like pizza really cheesy!

Ingredients

  • 8 mini naan flatbreads
  • 4 Tbsp. olive oil
  • 2 cups ham, diced
  • 2 cups shredded Mozzarella cheese
  • 2 cups pineapple, chopped (I use fresh, but you can use crushed, drained)
  • 1/4 cup diced red onion
  • 1/2 cup pizza sauce, I use DeLallo
  • Sea salt
  • Fresh parsley

Instructions

  • Turn oven on to 400 degrees F. On a cookie sheet lay the flatbread. Drizzle with olive oil; rub into each piece. Sprinkle with sea salt. Bake for 4 minutes; flip over. Bake additional 4 minutes.

  • Remove from the oven. Spread on each flatbread 1 heaping tablespoon of pizza sauce. Sprinkle with cheese. Divide evenly the ham, pineapple, and red onion on each flatbread.

  • Cook for about 6 minutes, or until cheese is melted. Garnish with fresh parsley; serve immediately!
