I’m not really wanting to admit to myself that school begins next week in our area. I remember when I was in school (way back when the dinosaurs roamed the earth! HA!), we didn’t start back until after Labor Day weekend. And you’d think since we are homeschoolers, that we could just up and start back any ol’ time we pleased, but that’s just not the case for us. You see, since we started this homeschooling journey, we’ve had some type of school year-round. While we go a bit lighter during the summer months, I’ve always loved staying on top of math and language arts or even digging deeper into parts of science or history that we really wanted to explore.

This year, we were rocking and rolling right along until mid-July hit. Sam had his third week (non-consecutive, mind you) of camp lined up, Bart was traveling seemingly non-stop, and I was on a roll with cleaning out closets and organizing the laundry room when – WHAM! Sam injured his leg requiringstitches, we allcaught some funky respiratory bug going around, and we just seemed to hit that proverbial wall.

We just lost that fire in our belly to push through our hurried pace to wrap up the courses we were doing over the summer break. We were tired. In hindsight, I have to admit it most likely was for the best. We all needed a break so we could start a brand spanking new school year refreshed and raring to go! Blessings sometimes come hidden in the dirt, don’t they? You just have to recognize them and give them a little nurturing to grow.

And what I realized during that week or so of everyone feeling their worst was that having a few things ready to go in the refrigerator made me at least feel a little bit better about things. I pulled out this old standby recipe for overnight oats that I love to use for weekday mornings when we are rushing around getting ready to starta jam packed day or to grab as we are running out the door.

Overnight oats really couldn’t be much easier to prepare. You just toss it all into a jar, give it a quick stir, put the lid on and pop it into the refrigerator overnight. The next morning, you can heat it for a few seconds in the microwave if you likeor just top it with fresh berries and a drizzle of maple syrup and dig in. If you are anything like me, you’ll find yourself assembling jars of overnight oats more and more and being so thankful for them the next morning!

Maple Berry Overnight Oats Recipe

This maple berry overnight oats recipe is a busy family’s friend! Perfect for those rushed mornings or for a grab and go breakfast!

Ingredients

  • 1/2 cup rolled oats
  • 3/4 cup coconut milk, almond milk, or milk
  • 2 tablespoon chopped walnuts
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup

For topping:

  • 1/4 cup fresh berries
  • 1 tablespoon maple syrup

Instructions

  • Add oats, milk, walnuts, chia seeds, flax seeds, vanilla, and maple syrup to a glass jar. Stir until well combined and place lid tightly onto jar. Refrigerate overnight.

  • To serve, remove from refrigerator and remove lid. Top with fresh berries and maple syrup. To serve warm, remove lid and place into a microwave for 30 second intervals until warmed throughout, about 1 1/2 to 2 minutes. Remove from microwave and top with fresh berries and maple syrup.

Notes

Time does not include resting time in refrigerator overnight.
