How to cut watermelon for watermelon salad
The hardest part about this salad is dicing the watermelon into those cute little ½” pieces. If that's too much of a pain, you could always buy the pre-cut melon pieces. But, convenience always comes with a price.
Why not just grab a melon and practice your knife skills. They’re so fun to cut once you get the hang of it. You mustbe careful and prevent the melon from rolling when you initially cut into it. Do this by cutting off and inch or two from each end, and using either end as a base to stand it up.

As for the radishes, feel free to chop them into any bite-sized shape you like. You could even pulse them in a food processor for a few seconds, but be careful...don’t liquify them.
What I LOVE about this watermelon salad
Everything! Every time I bit into it, I feel instantly hydrated! And of course I eat a bunch at once, because I’m a watermelon-binger.
This watermelonsalad with flecks of radish, topped with mint and tossed in a honey lemon vinaigrette…it has it all going on!
I also love that it only involves a little chopping, whisking, tossing, and chilling…and you’re done!
The spicy, crisp radishes against the tender, juicy watermelon, sweetened with a little honey and lemon?…what’s not to love?!

Ingredients
- 4 cups Watermelon diced
- 1 cup Radishes chopped
- ¼ cup fresh Mint chopped
- 2 tablespoons Lemon Juice
- 2 teaspoons Honey
- ¼ teaspoon Sea Salt
Instructions
For the watermelon salad
In a mixing bowl, combine WATERMELON, RADISHES, and MINT; gently toss to combine.
For the dressing
In a separate mixing bowl, whisk together LEMON JUICE, HONEY, SALT, and PEPPER.
When ready to serve, pour over salad, gently toss to combine; serve chilled. Store in an airtight container in the refrigerator up to two days.
